All flat fish start life swimming upright, with an eye on each side of their head, like a round fish. As they mature they start to swim on one side only and one eye moves round to the dark-skinned side of the body. They gravitate to the seabed where they feed on passing sea creatures, it is due to this method of feeding, which does not involve chasing food, that they do not develop much muscle fibre and have delicate white flesh.
