Curried Rice and Lentil Salad
Ingredients
250g white, red and wild rice
200g puy lentils
1 onion
1 dsp curry powder (to taste)
1 courgette (grated)
1 carrot (grated)
1 apple (chopped)
a handful of sultanas
French dressing
Method
1. Cook rice and lentils seperately according to instructions on the packet, drain and cool
2. Fry chopped onion in olive oil and when soft add curry powder
3. Cook for a further couple of minutes and add a good splash of French dressing
4. Leave to cool
5. When rice etc is cold combine all together and season to taste
